  • ½ tsp. salt
  • 2 tbsp. avocado oil or olive oil (TIP: do not use extra virgin olive oil due to due to its low smoke point)

2. Place the eggplant cubes into a medium-sized mixing bowl and add the paprika, salt, and oil. Mix well to coat the cubes evenly.

3. Spread the eggplant pieces evenly over the air fryer basket, ensuring they are in a single layer. Cook for 15-20 minutes at 400°F, shaking the basket halfway through to ensure even cooking.

Cook directly from frozen in the air fryer (no need to thaw), adding a few extra minutes to the cooking time.
