FROZEN PEANUT BUTTER & WHITE CHOCOLATE PROTEIN BARS – Indulging Innocently Recipes by @SpamellaB

With Spring in full swing and the stretch of nice sunny weather, it inspired this frozen treat dessert. A flapjack based bar topped with a vanilla yogurt layer, smothered with peanut butter and coated with creamy white chocolate – probably the best combination, right?! You could add cocoa powder into the yogurt for a more chocolatey indulgence, or swap white chocolate for dark, or use other nut butters like almond or cashew. However you make these, I can guarantee you’re going to love them.


Ingredients:
For the base –
- 80g oats
- 2 tablespoons nut butter
- 2 tablespoons maple syrup
- 2 tablespoons oat milk
For the frozen yogurt layer –
- 300g Greek or coconut yogurt
- 2 scoops vanilla (vegan) protein powder
- 80g sweetener
- 1 teaspoon vanilla extract
For the peanut butter layer –
- 1 tablespoon coconut oil
- 2 tablespoons nut butter
For the white chocolate coating –
- 2 tablespoons coconut oil
- 80g white chocolate (can be vegan)
- Granola, to sprinkle over

Make them!
- Mix together the oats, nut butter, syrup and milk to combine then divide between a 14/16 silicone mold with individual bars. Fill each up to ⅓ and press down.
- Next mix together the yogurt, protein powder, vanilla and sweetener until combined then spoon over each base to fill up to ⅔.
- Melt the coconut oil and nut butter then spoon over a little over each. Place in the freezer for 2 hours to mostly set.
- Pop out of the mold and place on a wire rack. Melt the coconut oil and white chocolate then generously spoon over each one.
- Sprinkle some granola over each one then place back in the freezer for at least 2 hours to set.
- When ready to eat, remove from the freezer 5-10 minutes before then enjoy.
